A rich, hearty homemade keto spaghetti sauce made with ground beef, whole peeled tomatoes, garlic, herbs, and olive oil. This low-carb sauce avoids added sugar and uses simple ingredients to create a flavorful meat sauce perfect for zucchini noodles, spaghetti squash, or other keto pasta alternatives.

Ingredients

☐ 2 tablespoons olive oil
☐ 2 ounces salt pork, diced
☐ ½ cup diced onion
☐ 2 cloves garlic, minced
☐ 1 pound lean ground beef
☐ Kosher salt and black pepper, to taste
☐ 56 ounces canned whole peeled tomatoes
☐ 1 tablespoon sugar-free granulated sweetener
☐ Pinch dried oregano
☐ 6 fresh basil leaves, chopped (or ½ teaspoon dried basil)

Prep List

☐ Dice salt pork
☐ Dice onion
☐ Mince garlic
☐ Chop fresh basil if using
☐ Open and prepare canned whole tomatoes

Instructions

☐ Heat olive oil in a large heavy pot over medium heat
☐ Add diced salt pork and cook until the fat is rendered
☐ Remove salt pork with a slotted spoon and discard, leaving fat in the pot
☐ Add onion and garlic and sauté until translucent (about 5–8 minutes)
☐ Add ground beef and cook until browned and crumbly
☐ Season meat with salt and pepper
☐ (Optional) Blend whole tomatoes if you prefer a smoother sauce
☐ Add tomatoes to the pot and stir them into the meat mixture
☐ Stir in sweetener, oregano, and basil
☐ Cover and simmer for at least 1 hour to develop flavor
☐ Taste and adjust seasoning before serving

Tips & Variations

  • Use Italian sausage or ground turkey instead of ground beef
  • Skip salt pork or replace it with bacon or pancetta
  • Blend tomatoes first if you prefer a smooth sauce
  • Add red pepper flakes for a spicy version
  • Serve over spaghetti squash, zucchini noodles, or shirataki noodles
