Ingredients

☐ 2 cups Bisquick

☐ 1 cup milk (start here — may reduce slightly for thicker batter)

☐ 2 eggs

☐ 1–2 tablespoons melted butter or neutral oil

☐ 1 tablespoon sugar

☐ 1–2 tablespoons sour cream or Greek yogurt

☐ ½ teaspoon baking powder (optional, if mix isn’t brand new)

Instructions

☐ In a bowl, combine Bisquick, sugar, and baking powder (if using).

☐ In a separate bowl, whisk milk, eggs, melted butter/oil, and sour cream.

☐ Pour wet ingredients into dry.

☐ Stir gently just until combined — lumps are okay. Do NOT overmix.

☐ Let batter rest 10 minutes (it will thicken).

☐ Preheat griddle to 350°F (medium). Lightly grease.

☐ Pour ⅓–½ cup batter per pancake. Let it mound — do not spread.

☐ Cook until bubbles form and edges look set (about 2–3 minutes).

☐ Flip once. Cook another 1–2 minutes until golden.

☐ Do NOT press down with spatula.

Optional “Extra Tall” Step

☐ Separate eggs.

☐ Mix yolks into batter.

☐ Beat whites to soft peaks.

☐ Gently fold into batter before cooking.

Texture Check

✔ Batter should fall slowly off spoon

✔ Pancakes should rise and stay thick

✔ Inside should be soft and fluffy, not dense
