Keto “Cookies & Crème Crunch Bits” (Best DIY Version)

Description

  • The crunchy part in cookies & crème clusters comes from ultra-dry, low-moisture cookie bits or crisps.
  • In commercial products like Atkins snacks, this is achieved using engineered ingredients such as extruded protein crisps or baked cookie inclusions.
  • At home, you can recreate this texture by baking and drying keto-friendly cookie crumbs until they are crisp and moisture-free.

Prep & Cook Time

  • Prep Time: 10 minutes
  • Cook Time: 20–25 minutes
  • Dry Time: 20–30 minutes
  • Total Time: ~1 hour

Serving Size

  • Servings: 8 servings
  • Approximate Serving Size: ~2 tablespoons crunchy bits

Ingredients

☐ 1 cup almond flour
☐ 2 tablespoons cocoa powder
☐ 2 tablespoons powdered keto sweetener (erythritol or monk fruit)
☐ 1/4 teaspoon baking powder
☐ Pinch of salt
☐ 1 tablespoon butter (melted)
☐ 1 egg white
☐ 1/2 teaspoon vanilla extract

Instructions

☐ Preheat oven to 325°F (165°C)
☐ Mix almond flour, cocoa powder, sweetener, baking powder, and salt in a bowl
☐ Add egg white, melted butter, and vanilla; mix into a thick dough
☐ Spread dough very thin onto parchment paper (thin = crispier result)
☐ Bake for 12–15 minutes until firm
☐ Remove and allow to cool completely
☐ Break into small chunks or pulse into crumbs
☐ Return crumbs to oven for 5–10 minutes to dry further
☐ Turn oven off and leave crumbs inside with door slightly open for 20–30 minutes
☐ Cool fully before using in recipes

Tips & Variations

  • The thinner you spread the dough, the crunchier the final result
  • Drying step is critical—moisture will soften the crunch
  • Mix in protein crisps for a more “store-bought” texture
  • Store crumbs in an airtight container to maintain crispness
  • Use immediately when adding to melted chocolate for best results
